Summary

The study shows the changes in the physicochemical characteristics of rice stored under five storage conditions: packaged with vacuum with deoxidiser, vacuum, CO2, air and paper bag wrapped and sealed for six months at temperatures of 5, 20, 30 °C and room temperature. The degradation quality of cooked rice in 30 °C was serious and could influence cooked rice quality if the brown rice is too dry in storing. However, the difference among the influences of storage quality of brown rice under the storage condition of vacuum with deoxidiser, vacuum, CO2 sealed gas was not obvious. Results from this study provides some references for rice storage in production.
