Summary

THE CULTURE OF A L. ACIDOPHILUS STRAIN THAT MAY GROW AT LOW TEMPERATURE REDUCES THE GROWTH OF PSYCHROTROPHS IN RAW OR RECONSTITUTED MILK STORED AT 279 K (6 DEG C). THE INHIBITION RATE VARIES WITH MILK QUALITY, INITIAL PSYCHROTROPH COUNT AND STORAGE TIME. THE STUDY SUGGESTS THAT HYDROGEN PEROXIDE IS NOT RESPONSIBLE FOR INHIBITION AS THE LACTO-PEROXIDASE SYSTEM OF MILK REMAINS INTACT. (Bibliogr. int. CDIUPA-CNRS, FR., 88-210-232614.
