Summary

CELLS OF LACTOBACILLUS LACTIS FROM FROZEN CONCENTRATED CULTURES WERE ADDED (1 X 100,000,000/ML) TO REFRIGERATED RAW MILK TO DETERMINE THEIR EFFECT ON GROWTH OF PSYCHROTROPHS DURING STORAGE OF THE MILK AT 278 OR 280 K (5 OR 7 DEG C). SOME STRAINS OF LACTOBACILLUS LACTIS WERE SIGNIFICANTLY INHIBITORY TOWARDS THE PSYCHROTROPHS. TWO STRAINS OF LACTOBACILLUS LACTIS ADDED ALONG WITH POTASSIUM SORBATE (0.1 AND 0.2%) TO RAW MILK AT 278 K WERE MORE INHIBITORY THAN EITHER LACTOBACILLI OR SORBATE ALONE. THE STRAINS OF LACTOBACILLUS LACTIS MOST ANTAGONISTIC TOWARDS PSYCHROTROPHS WERE THE MORE ACTIVE PRODUCERS OF HYDROGEN PEROXIDE.
