Summary

TWO STRAINS OF GRAM-NEGATIVE PSYCHROTROPHIC BACTERIA, PSEUDOMONAS P 104 AND FLAVOBACTERIUM P 108, CAPABLE OF PRODUCING EXTREMELY THERMOSTABLE EXOCELLULAR PROTEINASES, WERE ISOLATED FROM COOLED MIXED MILK. BACTERIA THEMSELVES, VERY SENSITIVE TO HEAT, ARE KILLED BY 30 SEC TREATMENT AT 333 K (60 DEG C), 5 SEC AT 338 K (65 DEG C) OR 1 SEC AT 343 K (70 DEG C). THE THERMORESISTANCE OF PROTEINASES IS SUFFICIENTLY HIGH FOR COMPLETE SURVIVAL TO A UHT TREATMENT.
