Summary
A newly developed central cooling device with air off cycle defrost was examined for a cooked ham packing line over a period of three months. The results of this comparative study with conventional workroom coolers show that the new cooling unit fulfils all the requirements of the packing line's operator. Moreover, a high standard of cold room air hygiene can be ensured.
