Summary

Investigation of heat and mass transfer conditions when refrigerating sausages in a hydro aerosol medium may be done taking into account criteria dependency that make it possible to define the heat transfer coefficient by convection for a cross or linear wet tube bundle as well as the heat transfer coefficient when vapour convection heat exchange on a wetted surface takes place. The paper recommends a criterion dependency to define a heat transfer coefficient for vapour convection heat exchange. It also presents the calculation of the heat transfer coefficient.
