THE ADVANTAGES OF RAPID PRE-COOLING OF FRUIT AFTER HARVEST ARE OUTLINED, AN EXCEPTION IN THE CASE OF PEACHES IS NOTED. HALF-COOLING TIME IN RELATION TO AIR FLOW IS SHOWN GRAPHICALLY AND DISCUSSED, IT IS A CONVENIENT MEASURE FOR EXPRESSING COOLING RATES. THE FACTORS CONTROLLING HUMIDITY IN STORES ARE DEALT WITH AND CALCULATIONS FOR A CITRUS COLD ROOM IN THE KISHON HARBOUR, HAIFA BAY ARE PRESENTED. AN INSTALLATION WHICH CAN BE USED FOR RAPID COOLING AND THEN LONG TERM STORAGE BY ALTERATION OF AIR DISTRIBUTION IS DESCRIBED. C.R.F.
