THE ADVANTAGES OF RAPID PRE-COOLING OF FRUIT AFTER HARVEST ARE OUTLINED, AN EXCEPTION IN THE CASE OF PEACHES IS NOTED. HALF-COOLING TIME IN RELATION TO AIR FLOW IS SHOWN GRAPHICALLY AND DISCUSSED, IT IS A CONVENIENT MEASURE FOR EXPRESSING COOLING RATES.
