Summary

Fresh "d'Anjou" pears were stored in bulk in a controlled atmosphere environment to determine the mass loss rate and overall transpiration coefficients. Effects of the cool-down period on mass loss and effects of the daily defrost cycle on the environment and fruit were also analysed. Hourly mass loss rates of 2.09 and 1.84 mg/kg, and transpiration coefficients of 0.36 and 0.34 mg/kg.s.kilopascal were observed, respectively for the 2 test periods.
