Summary

This article is devoted to simulation of pork half-carcass cooling processes with the purpose of their thermophysical and technological characteristics determination for designing and operation of refrigeration chambers of industrial refrigerators in the meat processing enterprises. The mathematical model is generated in the nonlinear boundary problem form of heat conductivity and approbated on results of numerical experimental data.
