Summary

A survey is given of the most important guidelines in the area of public and animal health, as related to meat and food hygiene. They deal with fresh meat, meat products, poultry meat, game and rabbit meat, shot game animals, egg products, milk, molluscs, fishery products and other products of animal origin. These regulations are complemented by guidelines on hormones and residues and other EC regulations.
