Summary

In the EEC Hygiene Guideline the memberstates are obliged to stimulate the producers of foods to draw up codes of hygienic practices. These producers are in any case responsible for their products. In drafting these codes the producers have to follow the principals of hazard analysis criticial control points. One of the critical control points during production may be the refrigeration of the product, but also the refrigeration of the endproduct can be critical regarding its safety. In the Netherlands the regulations regarding refrigeration of food are laid down in the Commodity Act. Also in this country the producers bear responsibility for the safety of their products.
