Summary
Mechanical properties of these products are relevant for their handling and consumer acceptability. Shakes composed of milk and banana were prepared with different degrees of dilution and mechanical behaviour during compression testing determined by an Instron universal testing machine. Highly significant linear relationships resulted between the percentage of sublimed water and mechanical parameters (force and elasticity coefficient at the fracture point) of the freeze-dried products.
