Summary

The aim of this work was to monitor the dynamics of the microbial population in minimally processed Chinese cabbage samples, subjected to chlorine, ascorbic and lactic acid washing procedures, packaged in a modified atmosphere using different O2 and CO2 concentrations and stored at 4°C for 12 days. Plating counts using different media highlighted that in general all samples showed microbiological values within the microbiological criteria established, except for psychrotrophic bacteria. The technological procedures used in this study have confirmed that the washing treatment with ascorbic acid/chlorine solution and modified atmosphere packaging are recommended requirements to guarantee the shelf life of minimalIy processed Chinese cabbage.
