Summary

In this work, ready-to-use salads, packaged in non-modified atmosphere, were analysed to study the dynamics of the microbial population during storage at 4 °C. The microbiological analyses were carried out using the plate count method in different media and lactic acid bacteria were identified by molecular methods as PCR/RFLP of 16S rDNA. The samples showed microbial counts higher than the microbiological criteria generally used and the identification results showed the dominance of Leuconostoc mesenteroides species.
