Summary

Many samples of industrial dairy products have been investigated to evaluate their microbial quality. High microbial counts of coliforms and staphylococci were found in some samples of dairy products. Strains of Salmonella and Listeria monocytogenes were isolated only from fresh cheeses. The results highlighted that contamination can occur during the manufacturing of dairy products. Consequently, it is necessary to continuously monitor dairy products during all stages of manufacture, transport and storage, in order to ensure the safety of consumers.
