Summary
Processing of milk has been increasing year by year in Turkey and reached 9 million tons in 1990. There are more than 3000 milk processing plants in the private and public sector and in cooperatives. After a first inspection, fresh milk is transported for cooling (down to 4 deg C) to modern collecting centres. It is then transported to the main processing plant.
