STUDY OF THE TRANSFER AND DISTRIBUTION OF MINERALS AND BETA-CASEIN BETWEEN THE SOLUBLE AND MICELLAR PHASES OF MILK DURING COOLING. THE EQUILIBRIUM BETWEEN PHOSPHATE AND CALCIUM IS ACHIEVED BY THE FORMATION OF CALCIUM PHOSPHATES WITH VARIOUS SOLUBILITY RATES. ONE PART OF BETA-CASEIN IS LINKED TO MICELLES BY HYDROPHOBIC BONDS. THE RATIO OF THIS BOUND FORM INCREASES BY SPONTANEOUS DEMINERALISATION OF MICELLES DURING COOLING OR BY ADDITION OF A CHELATING AGENT.
