Effects of storage at 4 deg C for 48 hours and at 8 deg C for 48 hours, after inoculation with L. lactis subsp. lactis, on the changes of the composition of milk containing different quantities of psychrotrophic bacteria. Measurement of the pH, nitrogenous fractions, colloidal minerals, proteins and the development of psychrotrophic bacteria before, during, and after storage. Emphasizes the importance of the initial microbial quality of raw milk.
