THE PROPERTIES OF PACKAGING MATERIALS, MOST NOTABLY PACKAGING FILMS, ARE DETAILED, AND THE CONDITIONING MACHINES FOR SMALL AND LARGE PACKAGINGS ARE DESCRIBED. THE EFFECTS OF THE 3 MAIN GASES USED ARE STUDIED, AND EXAMPLES OF APPLICATION TO DIFFERENT PRODUCTS ARE THEN GIVEN: LONG PRESERVATION DRY PRODUCTS, INTERMEDIATE MOISTURE PRODUCTS (DOUGH-BASED PRODUCTS, DELICATESSEN PASTRIES), HIGH MOISTURE PRODUCTS (FRESH DELICATESSEN PRODUCTS, POULTRY, FISH, MEAT PIECES) AND RAW VEGETABLE PRODUCTS.
