Summary

The first part of the paper describes a theoretical study of modified atmosphere-packaging methods and the second part contains experimental results of the Institute of Food Chemistry. The storage conditions (temperature, time and shelf-life) of some bakery product in modified atmosphere packs are given. The main conclusions of this work are that modified atmosphere-packaging techniques significantly extend bakery products' shelf-life.
