Summary

Research was done on the following: the influence of post-slaughter precooling methods (air-spraying or water/air-spraying method) and of the dripping of chicken carcasses on the amount of a drip-out inside packages during refrigerated storage of breast parts with a bone and leg parts; the possibility of prolonging shelf-life of cut-chicken by packing and storing them under a modified atmosphere (70-80% CO2, 30-40% N2, 0-5% O2); two methods of producing modified atmospheres.
