Summary

In this study, chitosan and thyme were used as natural antimicrobials in ready-to-eat chicken kebabs stored in modified atmosphere packaging. The combined use of chitosan and thyme under modified atmosphere conditions inhibited the growth of microbial spoilage flora, retarded lipid oxidation, maintained redness and imposed the sensorial quality.
