Summary
Work at the horticultural experimental centre "Po di Tramontana" of Veneto Agricoltura on prolonging shelf life and maintaining quality characteristics in fresh-cut head lettuce (Lactuca sativa var. acephala) is described. There were 4 different cycles (treatments) of conditioning and packaging (one cycle per month for 4 months) in rapid succession from early February 2001. The quality of the product was measured during each cycle. Results indicated that a good quality product could be obtained even after 15 days of storage if the level of CO2 was low, around 5-10%, and O2 was at 15%.
