Modified atmospheres for improved storage of Kontoula pears.

Summary

The Kontoula pear is a very early Greek variety of excellent quality, for which there are storage and marketing problems, since it can currently be stored no longer than one week. The goal of the author's research was to study the behaviour of these pears in modified atmospheres at two temperatures: 0 and 3 deg C. Two low- and medium-density polyethylene films of known permeability were used; during the experiments the gas kinetics was studied inside the packages, along with the changes in the physico-chemical and organoleptic properties of the fruit. Low-density packaging limited mass losses by maintaining freshness, hardness, colour, texture, flavour and the aroma typical of the variety.
