Summary

This article follows an initial one covering the theoretical aspects published in a previous issue of CT-Infos (No. 32) and reviews the state of the art via an exhaustive review of the literature on time-temperature integrators (TTIs) using various biological, chemical and physical measurement modes and presents the main systems available at present. It is vital to consider the "TTI + foodstuff + process" as a whole entity with specific properties, whichever TTI one examines.
