Summary

A METHOD IS PRESENTED FOR CALCULATING THE FREEZING TIME OF MEAT. THE ACCURACY OF THE CALCULATION METHOD IS VERIFIED FROM RESULTS OF FREEZING TESTS CARRIED OUT WITH A REPRESENTATIVE MEAT PRODUCT, AND FROM OTHER TESTS CARRIED OUT ON AN INDUSTRIAL SCALE FOR FREEZING OF MEAT SIDES. A DIAGRAM WAS PREPARED TO DETERMINE THE FREEZING TIME.
