DETAILS ARE GIVEN OF NEW TRAY TUNNELS FOR FREEZING ICE CREAM AND OTHER FOOD PRODUCTS. THE TUNNELS CONSIST OF AN ENDLESS CHAIN CARRYING STAINLESS STEEL TRAYS CONTINUOUSLY VIA AN INFEED/OUTFEED STATION INTO THE FREEZING ZONE, WHERE AN AIR BLAST AT 238 K (-35 DEG C) PASSES OVER THEM. THE ABILITY TO SWITCH RAPIDLY FROM ONE PRODUCT TO ANOTHER OPENS UP POSSIBILITIES FOR PRODUCTION OF A WIDE VARIETY OF ICE CREAMS, RANGING FROM MULTI-COLOURED GATEAU SLICES AND EXTRUDED ROLLS TO ICE CREAM BOATS, CONES AND CUPS WITH SUPPLEMENTARY FILLS OF JAM ETC.
