Summary

After a short introduction regarding historical characteristics of near infrared (NIR) spectroscopy, physical and chemical principles are shown, and a brief report on instrumentation given. The authors point out the most recent postharvest applications, in addition to chemometrical non-linear techniques. At the end of the report, NIR possibilities for developing on-line sensory and quality evaluation systems are shown.
