Summary

The design and operation of 2 prototypes of an instrument for measuring fruit softness of kiwifruits are described. The instruments were used to measure deformation of the fruit surface beneath a small spherical probe under constant load with time. A "Softness coefficient" was estimated as the slope of the regression line od deformation on the natural logarithm of time.
