Summary

This article is the Spanish translation of an article presented in the IIR Bulletin (reference 2001-0843. Conventional modified atmosphere packaging involves sealing produce within packaging of suitable gas barrier packs. A suitable modified atmosphere develops due mainly to product respiration and packaging film permeability. In the work, a novel approach, the use of elevated levels of oxygen (80%) or argon (40%) was investigated. Sensory scores, biochemical and physical attributes were monitored in various ready-to-use products packaged under these novel atmospheres. Acceptability scores and texture in certain products were improved compared to conventionally packaged commercial standards.
