Summary

Modified-atmosphere packaging (MAP) has become a widely used food preservation technique, which is now increasingly being used for extending the shelf life, improving the product image and reducing the wastage of a wide range of fresh prepared respiring fruit and vegetables. The application of novel high oxygen gas mixtures is a new approach for the retail MAP of fresh prepared produce and combination products. This paper provides some background technical and commercial information before describing the rationale for, and some of the research results obtained from, the use of novel high O2 MAP for fresh prepared produce and combination products. Details on the research results obtained from the use of novel argon and nitrous oxide MAP will also be briefly mentioned.
