Summary

Oyster mushrooms were packaged in low density polyethylene films and stored at 5 or 10 °C for 9 days. Weight loss, colour values (Hunter L.), in-package O2 and CO2 concentrations, respiratory activity, textural changes and microbiological populations were evaluated every 3 days. Evolutions of these different parameters are reported.
