Summary

This paper based on the literature provides an overview of major issues concerning packaging and storage of foods in modified atmosphere. Particular attention is paid to microbiology issues associated with using modified atmosphere packaging, showing the influence of modified atmosphere packaging on spoilage microorganisms and pathogenic microorganisms. Storage temperature is shown to have an important effect on the quality and shelf life of food packaged and stored in modified atmosphere.
