Summary
Vacuum-evaporating refrigeration can be used for milk chilling during its long transportation and for production of ice water, in which fresh fish is transferred. A formula for the calculation of liquid chilling time by vacuum-evaporating method, taking into consideration weight losses during vapor pumping out is given. It is shown that these losses during water chilling to near zero temperature can reach 2.5–7% from initial weight at high initial water temperatures characteristic of hot countries.
