Summary
The paper presents the classification of the quick-freezing process. Disadvantages of refrigeration by a machine on the base refrigerants and ammonia are examined. The paper analyses the cryogenic method of freezing when flow systems with liquid nitrogen are used for quick freezing of products of animal and vegetable origin. The principle of operation of a quick freezing unit (ACTA) made in Russia is cited. The main disadvantage of flow nitrogen systems is the one-time use of the cryogenic agent, a high cost which demands high attention to the equipment design.
