Summary

TWO OF THE PROBLEMS EXPERIENCED IN PRODUCTION OF PLATE-FROZEN HAKE MINCE BLOCKS OF CONSISTENTLY REGULAR SHAPE AND SMOOTH SURFACE TEXTURE ARE VARIATION IN THE PACKING DENSITY OF THE RAW MATERIAL AND, RELATED TO THIS, DISTORTION DUE TO (UNEVEN) EXPANSION ON FREEZING. THE AUTHORS CONCENTRATE ON PACKING DENSITY VARIATION AND ON SOME EXPERIMENTS WHICH, THOUGH NOT PERHAPS OF DIRECT APPLICATION, MIGHT SUGGEST IMPROVED FREEZING TECHNIQUES OR DIFFERENT METHODS OF PRODUCTION.
