Summary
Laboratory tests on beer and wine confirmed that CO2 snow contacting wine would entrain ethanol in the vaporizing CO2. The authors' objective was to apply the concept in pilot plant trials. White wine lost alcohol easier than red wine and some higher alcohols were removed at levels which paralleled ethanol removal. Other solutes remained at about the same levels as an untreated wine.
