Summary
The influence of CO2 accumulation during potato storage and treatment is studied. CO2 influences the colour of fried potatoes and sprout growth. Low-O2 modified atmospheres slow down sprout growth, but atmospheres with less than 1% of O2 present some drawbacks. To stop sprout growth, controlled atmospheres at 6 deg C are not a good alternative to chemical treatments.
