Post-mortem changes in rigor mortis and muscle contraction in brown trout reared in sea water.

Summary

Changes in rigor and morphometric traits were measured on fillet of brown trout (2.9 kg body weight) after slaughtering. Rigor was measured by the bending strength of fillet at different strains. Onset of rigor occurred first in the caudal part then in the anterior part. Time and intensity for maximum rigor (minimum bending) were related to initial pH and pH fall. Recoveries of fillet length and area were linear with time and not complete. Length and area at 7 days (90 and 95% of initial values) were dependent on intensity of contraction of fillet. Postmortem muscle contraction seems thus to be dependent for timing and intensity of pH fall.
