Summary

Fruits of peaches cv. Premier were immersed in a solution containing 600 mg benomyl and 250 mg Tween 80/litre at 49.5 °C for 2.5 minutes. After air drying, the fruits were packed in plastic trays and stored at 1 plus or minus 1 °C and 80 plus or minus 10% RH for 40 days. The pH values increased during storage. There was an increase in the total soluble solids content up to 20 days of storage, followed by a subsequent decrease. An increase in the soluble solids/total titratable acidity ratio with storage time was observed. Reducing sugars increased up to 30 days of storage, whereas sucrose decreased up to 20 days of storage.
