THE GREATEST PRACTICAL PROBLEM IS THAT THE PROJECTED INSTALLATION SHOULD CONTEMPLATE USE OF IDENTICAL PACKAGES, STACKING PATTERN AND AIR FLOW CHARACTERISTICS THAT PREVAILED IN GATHERING THE ORIGINAL DATA. PREDICTIONS BASED ON SUCH DATA SHOULD BE CHECKED BY MAKING AN ANALYSIS BASED ON THE CALCULATION METHODS AVAILABLE NOW. BUT DATA ARE LACKING ON SURFACE TRANSFER COEFFICIENTS, THE ASSUMPTIONS THAT MUST BE MADE REGARDING THE UNIFORMITY OF AIR VELOCITY AND THE DIFFUSIVITY DATA FOR FOOD PRODUCTS.
