Summary

Study of the response of 2 varieties of peaches, O'Henry and Elegant Lady, of various fruit sizes (125-275 g), to various controlled-atmosphere conditions. Woolliness appears to occur before the onset of internal browning. Modelling of the response of peaches is developed for a controlled atmosphere comprising 17 % CO2 and 6 % O2.
