Summary

THE AUTHORS DESCRIBE THE DEVELOPMENT OF A MODEL TO ASSIST IN THE DESIGN OF SUITABLE EQUIPMENT BY PREDICTING THE RATE OF WEIGHT LOSS IN UNWRAPPED MEAT UNDER CONDITIONS IN RETAIL CABINETS. A CLOSE CORRELATION WAS ESTABLISHED BETWEEN PREDICTED AND MEASURED VALUES. THEY SHOW THAT ALTHOUGH THE FACTOR DETERMINING THIS RATE IS MASS TRANSFER ON THE SURFACE AT LOW VELOCITIES, IT CHANGES RAPIDLY AT HIGH VELOCITIES. THE CONDITIONS WHICH MOTIVATE THIS CHANGE VARY ACCORDING TO FOODSTUFFS.
