Refrigerated display cabinets for meat products.

Summary

Refrigerated display cabinets are widely used in supermarkets to present foodstuffs while maintaining their temperature at a low level. Firstly, the last regulations concerning meat products temperature stored in display cabinets and a few figures related to meat trade versus the different kinds of shops are given. The most recently designed display cabinets are presented and experimental measurement which allow to assess the energy balance and which provide the basis to improve their efficiency are discussed. Lastly, the European standardization of laboratory tests is mentioned.
