Summary

The aim of the investigation was to evaluate the effects of four drying processes on the microstructure of Agaricus bisporus mushrooms. Mushrooms were dried to the same water content in different ways: air drying, freeze-drying, citric acid pretreatment and air drying, microwave preheating followed by air drying. Volume changes and pore structure of dried samples have been investigated by the method of nitric porometry. Mathematical modelling was applied to the data obtained.
