Summary
In order to ensure that contamination of foodstuffs by pathogens is kept to the lowest possible level, manufacturers' strategy is threefold: prevention and elimination of contamination and prevention of growth. This article provides an overview of a seminar devoted to predictive microbiology. There are many parameters determining the growth and multiplication of microorganisms; these parameters are intrinsic for each micro-organism (species and strains, past and present physiological status) and are characterized by the medium in which the micro-organisms are placed. One does not have to be a microbiologist in order to grasp that this issue is complex.
