PROCESSED FOOD HAVE BEEN HIGHLY DEVELOPED IN JAPAN. AMONG THEM, FREEZE-DRIED FOODS ARE USED AS A KIND OF PROCESSED FOODS FOR A GREAT VARIETY OF APPLICATIONS. THERE ARE ABOUT 25 COMPANIES MANUFACTURING FREEZE-DRIED FOODS. MOST OF THEIR PRODUCTION PLANTS BEING USED ARE MADE IN JAPAN EXCEPT THOSE FO FD COFFEE AND THE PRODUCTION CAPACITY IS AROUND 8,000 M2 IN TERMS OF SHELF AREA. ONE OF THE FEATURES OF THE MARKET OF FREEZE-DRIED FOODS IN JAPAN IS IN THAT THE FREEZE-DRYING PROCESS IS APPLIED TO FOODS PECULIAR TO JAPAN (< RHAMEN >, INSTANT < MISO > SOUP, INSTANT < CHAZUKE >).
