THE AA. EXAMINE THE POSSIBILITY DERIVING FROM HYDROCOOLING OF APPLES WHICH, BY ENSURING RAPID COOLING, MAKES IT POSSIBLE TO STOW THEM QUICKLY IN COLD-STORAGE CHAMBERS AND PERMITS LONGER STORAGE WITH BETTER INTRINSIC QUALITIES. MOREOVER, IT HAS BEEN SHOWN THAT WHEN COOLING AND ANTI-SCALD AND ROT PREVENTION TREATMENTS ARE CARRIED OUT SIMULTANEOUSLY, THE RESULTS OBTAINED ARE COMPARABLE TO THOSE GIVEN WHEN THE TREATMENTS ARE EFFECTED WITH A FUNGICIDAL SOLUTION AT ROOM TEMPERATURE.
