Summary

Psychrotrophs while growing in raw milk produce heat-stable extracellular protease and lipase which cause adverse effects on quality of milk and dairy products. Several methods of controlling these organisms have been suggested. Low temperature storage together with good hygienic practices seem to be a practical way of controlling psychrotrophs in raw milk.
