Summary
In immature legume seeds such as green soybean and green peas, the amounts of sucrose and amino acids, which contribute to taste, decrease greatly during storage at 20°C, whereas they decrease slightly at 5°C and below. Starch and some oligosaccharides increase concomitantly with a marked decline of sucrose during storage.
